Carol got here (late) last night! She and her best friend Blanche are camping out on air mattresses in her empty house across the street. She doesn't have a fridge and won't for a few weeks, so I'm looking forward to feeding her.
I'll update my sidebar in a minute, but here's this week's menu:
SATURDAY - Last night I made a polenta casserole that ROCKED MY WORLD. It was almost like a lasagna - a layer of polenta, then Parmesan cheese, sausage, then sauce, then mozzarella. I had no idea peasant food could be that delicious and it dawned on me that it is WAY healthier (not to mention easier) than regular lasagna because whole grain corn meal is chock full of fiber and healthy stuff. Yumm. I also made crab dip.
SUNDAY - Tonight I'm making a Dijon and herb-stuffed pork tenderloin to serve with mushroom orzo pasta, roasted cauliflower and a salad. For an appetizer, I might stuff some mushrooms with the crab dip I made last night.
MONDAY - Quick chicken (maybe I'll finally get around to photographing this one!) with yukon gold mashed potatoes, asparagus, green salad.
TUESDAY - Shrimp Alfredo. I make a killer Alfredo sauce, but it would probably be better for your health to just eat an entire stick of butter. I think I'll make the shrimp separately and then the kids can fill up on pasta and the grups can fill up on shrimp. Needless to say, BIG GREEN SALAD.
WEDNESDAY - Magic meatloaf, green salad, the scalloped potato recipe that Alex wanted me to make for him.
THURSDAY - Chicken fingers for the kids (I'll be making them from scratch though), cream of mushroom soup (I found a lower fat recipe than the one I usually make, so I'm going to try it).
FRIDAY - Homemade pizza. Green salad.
I really like your weekly menu updates. I've stolen your meatloaf recipe (adapted for picky husband) and plan to steal other recipes as well. :)

I started reading you over at Club Mom. I just wanted you to know that I tried the recipe for roasted cauliflower. I don't care for steamed or raw cauliflower. This was AWESOME. I made it Friday night and Sunday afternoon. My husband loved it too. Thanks so much for sharing the recipe. Yummy!

I've made your meatloaf twice now. My husband loves it. When we first got married he swore that he didn't like meatloaf (his mom made it very plain). He's always liked mine though, but now he loves yours. ;) We had it Friday night, and on Sunday morning I put the leftover slices into a pan with some potatotes and cooked them up. Mmmm. It was good. Sort of like a meatloaf hash. Thanks for the recipe!!

My husband & I will be there for Wed. dinner: Magic Meatloaf/scalloped potatoes. Husbands very favorite meal in the whole wide world.
On another line: Being married to a banker and having the same issue with paying off and dealership sending check late. In this neck of the woods the dealership has to get this removed from your credit by contacting the pay off bank & sending a letter for your file (credit) or it will haunt you
4-ever. It took the husband about 4 calls to get it straightened out & he KNOWS what and how to say what is needed. LOL
