I know it may not look like it from my photos, but I AM eating again. Running seems to have restored at least a fraction of my former appetite, the increase in which appears to be directly correlated to how much trail mix I can shove down my gullet between Brazilian waxes. I can't stop eating it! It's gotten so bad that I've actually started making my OWN trail mix from the bulk bins at the grocery store.
Sunflower seeds, dried cranberries, cashews, raisins, pumpkin seeds and almonds, OH MY!
Unfortunately, there is no elegant way to it. It's cave man food. You either have to tilt your head back and pour it into your mouth or lick it off the palm of your hand. There's really no way around it.
EXCEPT THERE IS!
Today I turned it into muffins. Portable, deeeeelicious, self-contained trail mix deliverables.
RECIPE FOR BANANA TRAIL MIX MUFFINS
- 1 cup white flour
- 3/4 cup whole wheat flour
- 1/4 teaspoon salt
- 2 teaspoons baking soda
- 2 cups trail mix
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 cup mashed bananas
- 1/2 cup milk
- 2 eggs
- 1/2 butter
For the topping:
- 2 tablespoons cold butter
- 1/8 cup flour
- 1/4 cup of pumpkin or sunflower seeds
- 1/4 cup brown sugar
- 1/4 teaspoon salt
Preheat oven to 350 degrees and either butter and flour your muffin tins or insert paper muffin cups. Mix the dry ingredients together. Melt butter, whisk in sugars, eggs, then bananas. Add dry ingredients, alternating with the milk until the batter is sticky and well combined. Add trail mix. Spoon into prepared muffin pan, filling each cup 3/4 full.
Combine the topping ingredients until it forms a coarse crumble and generously sprinkle over muffins. Bake 20-25 minutes until brown and delicious.

Sounds good! I make homemade granola bars with my trail mix obsession. It took a few batches to get the right mix down for a proper bar, but even the loose granola is a good snack (though not a low calorie one).
